I embarked on my gluten free scone adventures last year and ended up with Scookies, which are wonderful for certain purposes like using them as a sandwich for yummy preserves or jam.  My real goal though was to get to a point where I could replicate my all time favorite scone, the Peets Coffee & Tea Lemon Curd Scone. Armed with a brand new scone pan (thanks mom!) and more baking experience, I finally hit it out of the park with this recipe. My hubby ranked it up there with Picadillo, which I'm pretty sure he would eat every day if I made it. The crumb of this scone was perfect and the meyer lemon flavor was so fantastic I felt it was unnesseary to top with more lemon curd.

Gluten Free Moravian Molasses Cookie

Armed with another gluten free year of experience under my belt, I made my family's Moravian Molasses Cookies again for the holidays. A small amount of quick internet research tells me that these cookies originated in what is now the Czech Republic after the spice trade began to take off in the area. These cookies were meant to highlight those new flavorful spices that were coming through the region. This re-vamped version eliminates the gums I used in my first attempt and changes amount of flour to 140 grams of gluten free all purpose flour mix per cup in the original recipe.

POBY Smoothie


After I found out that I could no longer eat strawberries, I was pretty disappointed, especially in BOS (Banana, Orange Juice, Strawberries) smoothies I would be missing out on.  Shortly after, on a visit to one of my favorite places, the Ferry Market Building in San Francisco, I tried subbing peaches in a fresh made smoothie. I loved it and now it's one of my favorites!

Camping Gluten Free: Breakfast


While we could have gone the cooler and ice route for to keep some of our food chilled. We decided to go for the uncooled route.  That left us without the breakfast luxuries of eggs, bacon, and chilled non-dairy milks for cereal. We also chose to opt away from more difficult breakfasts like pancakes, which we could have made without eggs by using a flaxseed paste.

Hazelnut Cake with Cherries & Chocolate Chips


Adapted from Simply Gluten Free's Apricot Almond Tart, which is now quite possibly one of my favorite desserts because of how light and delicious it is. 

This adaptation is quite the opposite. It's heavy (in a good way), rich, and one slice is all the dessert you need.  For my tastes, this is like a rich chocolate cake with chocolate frosting.  A wonderful indulgence but not an everyday treat.
