Gluten Free Holiday Cookies
It all started back in my very first apartment during my sophomore year of college. Both the holidays and finals were rapidly approaching and I had a full kitchen at my disposal after a year of living in the dorms with a microwave and mini-fridge. I needed a way to both procrastinate writing papers and to get into the holiday spirit in sunny San Diego. And so, I covered all the flat surfaces in my two bedroom apartment (shared with three other girls) with cookies.
Exactly a decade later, with a few exceptions, I've continued to take one day during the holidays to cover all the flat surfaces of wherever I've been living with cookies. I haven't picked out my day on the calendar for this year quite yet, however I do know what cookies I'll be making.
First, two of my standbys that I make year round. Nothing beats a good old Chocolate Chip Cookie and the Oatmeal Carrot Cookies are based off the ones my grandmother used to make.
This second set are two family favorites that I grew up eating and adapted during very first holiday season of eating gluten free. If you're a fan of molasses, you'll love the Moravian cookies and if you're a fan of butter, you'll love the Accordion Treats.
A few other cookies I'm planning at trying my hand at...
Pistachio & Vanilla Bean Shortbread Cookies
all the things in The Christmas Dessert Freedom Cookbook
Ginger Almond Biscotti (the recipe is not gluten free, I'll just sub gluten free all purpose flour)
