Excuses, excuses... I got rocked with the flu this past week and took a short trip to California so photos of all this yummy food is missing yet again. Luckily, I see a couple months on the horizon where I will be working only 8 hours a day at my "day" job, meaning I'll have more time to cook and be creative. I'm especially excited to continue working on my Fig Newly (read: newton/cookie) recipe that I started experimenting with last month because I just got a new rolling pin! On to this week's goodies;
Based of a cookie my grandmother used to make me, these are my go to cookie for myself when feeling in need of a cookie. They're soft and moist and the chocolate gives them that guiltiness that all cookies need. I love them for road trips and travel.
This soup will stick to your ribs and bring comfort after a rough day - if you like a creamy potato-ey kind of comfort. It's probably not so friendly for your health, so I wouldn't recommend having it to often. Moderation is key.
Did I say that last week was crazy? Well, it was nothing compared to this week, however I did manage to get a picture of the fresh goodies in this delivery.
Since I had to go to Washington DC on a work trip, we thought we would take the opportunity to stay the weekend and visit the museums around the city. We got through five of them (American History, Natural History, Air & Space, American Indian, and the Botanical Gardens) and I think that's pretty good for a weekend. We walked the entire mall and we found a lot of safe places to eat gluten free food!
After I found out that I could no longer eat strawberries, I was pretty disappointed, especially in BOS (Banana, Orange Juice, Strawberries) smoothies I would be missing out on. Shortly after, on a visit to one of my favorite places, the Ferry Market Building in San Francisco, I tried subbing peaches in a fresh made smoothie. I loved it and now it's one of my favorites!
We only spent a few moments in Coeur d'Alene to grab some dinner and take a quick walk along the lake, but it was beautiful and we plan to go back for a longer visit.
Like I mentioned in the post about breakfast, we opted to go for meals that did not require ice or refrigeration for a week long trip. Additionally, we tried to consider that we might be super tired at the end of each day and therefore meals needed to be simple. To do this, we stuck with simple one pot meals.
