Gluten Free In Seattle, Washington: Fish & Chips!

I took a first stab at my Seattle Summer Gluten Free Challenge and it was wonderful!

We went out on a nice sunny and warm Friday night to 50 North over by University Village. Their menu is all labeled with which options are gluten free, vegetarian, and vegan.  It also specifically notes that most dishes are able to be made gluten, dairy, or egg free.

Now, why I really chose this place as the first stop on my challenge was because they offer gluten free fish and chips!  It's one of my absolute favorite meals and it's incredibly hard to find gluten free. Oh and those fries were awesome.

Gluten Free In and Around Nelson, New Zealand

We spent about a week in the Nelson and Abel Tasman region which sits at the top of the South Island.  We stayed for two nights in Kaiteriteri Beach at a wonderful cottage surrounded by fruit trees and then three more nights in Abel Tasman National Park at Awaroa Lodge.  There are so many parts of Nelson and the rest of the north part of the South Island that we didn't have time to explore and someday I would love to go back.  The beaches and water were simply beautiful.

Gluten Free In Seattle, Washington: Organic in the University District

Before I get in to the rest of this post I have to write something about the amazing smoothy that is pictured above.  It's called Chocolate Cherry and it's just about one of the best things I have ever tasted. It's a blend of bananas, cherries, raw cacao, and vanilla hemp milk and tasted so much like a chocolate milk shake that I wanted to jump up and down a whole lot.

Macaroni and Cheezzz

I'm trying to get in a habit of stopping by the Flying Apron on weekends to grab a snack or a sweet treat of some sort.  On of my favorite things they have there is a Macaroni & Chez with spinach and after having it for the first time I knew I had to recreate it! Their version listed the primary ingredients as olive oil, tahini, nutritional yeast, turmeric, and cumin.  I made a couple of versions but nothing turned out just right.  And just at that moment a friend e-mailed me a recipe from the Vegan Fusion World Cuisine cookbook and with just a couple simple changes, I ended up with a perfect gluten and dairy free (and vegan!) substitute for one of my favorite comfort foods.
