Each year I wait for Meyer Lemons to show up in the produce section of the store so I can make lemon curd. Last year I had an idea to combine two of my favorite things, lemon and ginger. Instead of a shortbread crust I used crushed gluten free gingersnaps. It made such a difference. This year I'm refining the recipe to be dairy free as well as gluten free. I did some researching and cataloguing of the different ratios of egg, lemon juice, sugar, butter, flour, etc. My conclusion is that butter is not an essential ingredient and that less sugar makes the Meyer Lemon flavor shine through. I also refuse to add any additional powdered sugar on top because again, it just takes away from that wonderful lemon flavor that only makes a short appearance each winter.
It's a testament to my commitment to this blog that I even photographed our delivery this week. Our cute, cuddly, and squirmy little puppy has been demanding much attention. Her favorite activity seems to be sleeping on our laps. She's going to be an adventure for sure and I'll be posting lots of photos on twitter.
Anyway, it's a new year and I've got a couple of goals for both this site and beyond. I've also got a brand new puppy in the house that's competing for my time and attention, so it will be interesting to see how this all works out.
In 2011, I visited 19 states, provinces, and regions in 3 different countries, went camping for the first time while being gluten free (see my series of posts on Breakfast, Lunch, and Dinner), and purchased a KitchenAide Stand Mixer!
Oh the group trip. Are you familiar with these? They combine the fun of exploring new places with friends with the chaos of trying to coordinate a large number of independently minded people. From my experience with group trips, the most challenging part has always been related to the food.

These gluten free versions are maybe a bit more fluffy than crispy and have to be very gently removed from the foil. Someday I would like to try making these dairy free by substituting coconut oil. But I'll save that for another day and let you enjoy the butter goodness of these!
And yes, you may also call these Banana Slug Cookies.

I don't know why, but ever since we moved to Seattle all of the broccoli we buy seems to be infested with these little grey bugs. I had never encountered these in california, but it sure makes me sad! I ended up throwing away 1 of the 3 crowns we got in our box this week.
